A Hearty Trail Drive Supper

On the cattle trails, stew wasn’t just a meal — it was survival. The chuckwagon cook tossed in whatever the day’s drive allowed: tough cuts of beef, root vegetables, a handful of beans, and enough seasoning to keep the cowboys happy. Slow‑cooked over an open fire, this stew filled bellies, lifted spirits, and kept the crew riding strong from sunup to sundown.

Chuckwagon Stew Recipe

Ingredients

  • 2 lbs beef (stew meat or leftover cuts)

  • 4–5 potatoes, diced

  • 3 carrots, sliced

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 cup beans (pre‑cooked or canned)

  • 6 cups water or broth

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika (optional but frontier‑authentic)

  • 1 bay leaf (if available)

Instructions

  1. Brown the Meat In a large pot or Dutch oven, brown the beef over medium heat. Frontier cooks did this to build flavor.

  2. Add the Vegetables Stir in potatoes, carrots, onions, and garlic. Cook a few minutes until the onions soften.

  3. Pour in the Liquid Add water or broth, enough to cover everything well.

  4. Season It Up Add salt, pepper, paprika, and bay leaf. Adjust to taste — trail cooks seasoned by instinct.

  5. Simmer Slow and Steady Let the stew cook low and slow for 1½–2 hours, stirring occasionally. The longer it cooks, the better it gets.

  6. Add the Beans Stir in the beans during the last 20 minutes of cooking.

  7. Serve Hot Ladle into bowls and enjoy with biscuits, cornbread, or whatever the wagon had on hand.

Frontier Note

Chuckwagon stew changed from day to day — no two pots were ever the same. Some days it was rich and hearty; other days it was thin and stretched to feed a hungry crew. But no matter what, it was the heart of camp life and the one meal cowboys always looked forward to.
